Ingredients

🧁 For the Cake:

  • 5 egg whites
  • 1 tsp white vinegar (for volume and fluffiness)
  • 5 egg yolks
  • 3 tbsp Steviana sweetener
  • 1 tsp vanilla extract
  • ¼ cup almond milk
  • 1 tbsp coconut oil (for extra softness)
  • ½ cup almond flour
  • ½ tsp baking powder
  • Mixed berries (for topping)

🍓 For the Filling:

  • 3 tbsp homemade sugar-free berry jam
  • 2 tbsp thick cream (Qishta or clotted cream)

🍓 For the Jam:

  • 1½ cups frozen berries (or fresh with ¼ cup water)
  • 3 tbsp Steviana
  • Juice of ½ small lemon

    Instructions

    🍰 To Make the Cake:

    1. In a large bowl, whisk the egg whites with vinegar until stiff, cloud-like peaks form.
    2. In a separate bowl, mix the egg yolks, Steviana, vanilla, almond milk, and coconut oil until smooth.
    3. Gently add almond flour and baking powder to the yolk mixture.
    4. Gradually fold the whipped egg whites into the batter until fully combined.
    5. Spread the batter evenly in a parchment-lined baking tray.
    6. Bake in a preheated oven at 180°C (356°F) for 15–20 minutes or until fully baked.
    7. Once slightly cooled, flip the cake and trim the edges for a clean roll.
    8. Spread the berry jam evenly over the surface, then layer the cream.
    9. Roll it tightly and place it in the freezer for 30 minutes to set.
    10. Slice, garnish with fresh berries, and serve with your favorite drink.

    🍓 To Make the Jam:

    1. In a saucepan over low heat, combine the berries, Steviana, and lemon juice.
    2. Stir occasionally until the mixture thickens and darkens in color.
    3. Let it cool, then store in a glass jar in the fridge.
    4. Use it as needed in cakes, toast, or low-carb desserts.
