Ingredients

- 2 tbsp thick cream (Qishta or clotted cream)

- 1½ cups frozen berries (or fresh with ¼ cup water)
- 3 tbsp Steviana
- Juice of ½ small lemon

🍰 To Make the Cake:
- In a large bowl, whisk the egg whites with vinegar until stiff, cloud-like peaks form.
- In a separate bowl, mix the egg yolks, Steviana, vanilla, almond milk, and coconut oil until smooth.
- Gently add almond flour and baking powder to the yolk mixture.
- Gradually fold the whipped egg whites into the batter until fully combined.
- Spread the batter evenly in a parchment-lined baking tray.
- Bake in a preheated oven at 180°C (356°F) for 15–20 minutes or until fully baked.
- Once slightly cooled, flip the cake and trim the edges for a clean roll.
- Spread the berry jam evenly over the surface, then layer the cream.
- Roll it tightly and place it in the freezer for 30 minutes to set.
- Slice, garnish with fresh berries, and serve with your favorite drink.

- In a saucepan over low heat, combine the berries, Steviana, and lemon juice.
- Stir occasionally until the mixture thickens and darkens in color.
- Let it cool, then store in a glass jar in the fridge.
