Ingredients:
- 2 eggs
- 3 Steviana sweetener sachets
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 1 tbsp orange zest
- Juice of 1 orange
- ⅓ cup melted butter
- 145 g fine rice flour
- 11 g baking powder
Instructions:
- In a blender, mix the eggs, vinegar, Steviana, vanilla, orange zest, orange juice, and melted butter until smooth.
- In a large bowl, add the rice flour. Pour in the blended mixture, then add the baking powder. Stir until the batter is creamy and well combined.
- Pour the batter into a greased baking pan dusted with rice flour.
- Bake in a preheated oven at 190°C (375°F) for 20–25 minutes or until golden and firm.
