Pistachio Ice Cream with Steviana

🍨 Ice Cream Ingredients:

  • 1 cup unsalted, shelled pistachios
  • 1 cup cold whipping cream
  • 1 tbsp Steviana
  • 1 scoop whey protein (optional)

🍫 Chocolate Coating:

  • 50g dark chocolate
  • 1 tbsp coconut oil
  • 1 sachet Steviana

🥄 Instructions:

  1. Blend the Base:
  • In a food processor, combine the pistachios, whipping cream, Steviana, and whey protein (if using). Blend until smooth and creamy.
  1. Freeze the Mixture:
  • Pour the mixture into silicone molds and freeze for at least 4 hours or until firm.
  1. Prepare the Coating:
  • Melt the dark chocolate with Steviana and coconut oil using a double boiler (bain-marie) until smooth and glossy.
  1. Coat the Ice Cream:
  • Remove the frozen ice cream from the molds, dip each piece into the melted chocolate, and garnish with chopped pistachios.

  • Return the coated pieces to the freezer for 10 minutes to allow the chocolate to harden.
