Ingredients:
- 4 medium carrots (220 grams)
- 2 eggs
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/4 teaspoon ginger
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons stevia
- 1/4 cup low-fat milk (or coconut milk)
- 1/3 cup raisins
- 1/3 cup walnuts
- 1/4 cup coconut oil
- 1 1/2 cups almond flour (170 grams)
- 1/2 cup shredded coconut (42 grams)
Topping Ingredients:
200 grams low-fat cream cheese
2 tablespoons stevia
Directions:
1. Soak the raisins in warm water and set aside.
2. Grate the carrots or blend them in a blender.
3. In a blender, place the eggs, 2 tablespoons stevia, coconut oil, vanilla, milk, cinnamon, salt, ginger, and baking powder and blend well.
4. Add the grated coconut and almond flour to the mixture in the blender and blend well until combined.
5. Then, add the raisins and carrots to the soup using a fork and mix lightly. Then, add the walnuts and mix again.
6. Place the soup in a baking paper and bake at 180°C for 30 to 45 minutes, or until golden brown.
Topping Preparation:
1. Mix the cream cheese with 2 tablespoons of Stevia using an electric mixer until you get a creamy, spreadable consistency.
2. Spread the cream cheese over the warm cake.
